Tasting Notes

Nose : Characterised by a nice aromatic purity and a strong minerality.

Palate : The wine is rich, it has a nice complexity with ripe fruit aromas (apricot, peach) and a more mineral side due to the chalky soil.

Laying : Drink after two or three years or lay down for six to eight years depending on the vintages.

Terroir

Little white vines enclave in the middle of our big red vines parcel, it faces south east. This parcel always is very precocious.

Soil

70% chalky 30% clayey.

Grape Variety

100% Chardonnay.

Age of the vines

20 years.

Harvesting

100% Manual.

Destemming

No destemming but a crushing before the pneumatic pressing.

Winemaking

After pressing, the must is directly put into barrels where the alcoholic and malolactic fermentations take place.. Aged entirely in barrels with 15 to 20% new barrels.

Alcohol

13% Vol.

Ageing

About 10 months.

Production

About 900 Bottles.

Best served with

Shellfish (Lobster, coquilles Saint-Jacques), fish en papillotte, foie gras with a four or five years old wintage.
