Tasting Notes

Nose : Very fragrant, the ripe fruits aromas coming from the vines youth blend with the mineral freshness of the terroir.

Palate : Great complexity since the entry with a bursting fruity taste giving a great length to the wine.

Laying : Drink after two or three years or lay down for seven to nine years depending on the vintages.

Terroir

Very well located parcel, on the hill above Gamay it is next to the Murgers des Dents de Chien . The parcel faces south west.

Soil

Chalky, clayey.

Grape Variety

100% Chardonnay.

Age of the vines

5 years for two thirds, 50 years for the rest.

Harvesting

100% Manual.

Destemming

No destemming but a crushing before the pneumatic pressing.

Winemaking

After pressing, the must is directly put into barrels where the alcoholic and malolactic fermentations take place. Aged entirely in barrels with 25% new barrels.

Alcohol

13% Vol.

Ageing

About 10 to 15 months.

Production

About 3 000 Bottles.

Fish with sauce, foie gras.
