Tasting Notes

Nose : Tight, precise and very mineral.

Palate : The entry presents a great aromatic purity, supported by citrous notes in the finish. This appelation requires some time before it fully opens.

Laying : Drink after two or three years or lay down for seven to nine years depending on the vintages.

Parcel located above Gamay, It faces south-west.

Soil

Very chalky white earth

100% Chardonnay.

30 years.

Harvesting

100% Manual.

Destemming

No destemming but a crushing before the pneumatic pressing.

Winemaking

After pressing, the must is directly put into barrels where the alcoholic and malolactic fermentations take place. Aged entirely in barrels with 20% new barrels.

Alcohol

13% Vol.

Ageing

About 10 months.

Production

About 1 500 Bottles.
