Tasting Notes

Nez : Finesse and minerality, always a bit closed in its youth.

Bouche : The wine stays rather tight, sharp (a mineral characteristic of white Saint-Aubin). The ageing in wood barrels gives it a nice persistance.

Garde : Drink after two or three years or lay down for five to seven years depending on the vintages.

Terroir

Parcel located on the hill between Saint-Aubin and La Rochepot, it faces south.

Soil

Chalky white earth.

Grape Variety

100% Chardonnay.

Age of the vines

35 years.

Harvesting

100% Manual.

Destemming

No destemming but a crushing before the pneumatic pressing.

Winemaking

After pressing, the must is directly put into barrels where the alcoholic and malolactic fermentations take place. Aged entirely in barrels with 10% new barrels.

Alcohol

13% Vol.

Ageing

About 10 months.

Production

About 1 200 Bottles.
