Tasting Notes

    Nose : Fresh red fruit aromas (raspberry, cherry).

    Palate : The fruity aroma is found on the palate where tannins are present but do not dominate.

    Laying : Drink after two years or lay down for four to six years depending on the vintages.

Parcels facing south-east on the Maranges hills (west of Santenay).

Rich, clayey soil

Destemming

100% Destemmed.

Winemaking

After a rigorous selection of the grapes, they are destemmed then put into concrete tanks. Cold maceration during ten days or so with treading and pumping over, then alcoholic maceration during eight days. After the press wine is racked and blended, the wine stays in concrete tanks.

Alcohol

12,5% Vol.

Ageing

In tanks during about fifteen months. The malolactic fermentation is done tardily in order to keep as much fruit as possible.

Production

About 7000 Bottles.

Gizzard salad, grilled meats, mild cheeses.
